You can keep the sticker in a safe place in case you ever need to RMA it. Or you could tape it to the bottom of the power supply for safer keeping. There wont be an issue with it, if you tell them it came off it you ever have to contact them.
TheUnk is correct. You do not need to use the DisplayPort for Nvidia Surround. You can plug 2 monitors into the DVI ports and the other into the HDMI. Try that and see if your monitors still shut off.

I could understand that you want it to be quiet when you are idle. But silent operation is usually not the best for performance. Besides, if you are playing a game or something, you would have audio that will drown out any hardware sounds.
I wired a spare 12v outlet into my old car and used one of those car adapters to a usb port that went behind my dash and out the dash vent to my phone cradle. Worked very well that way.
I think you are too picky. All of my power supplies make noise. I have an EVGA 750G and it does not sound any different than any other power supply. You should have kept that EVGA 650 and just RMA'd it. You would have a good PSU with a 10 year warranty
