I had an AMD Irongate for about three weeks, most worthless pos I have ever owned!
I played Blood2 and Quake III at CompUSA on a Sony LCD and it was awful! If you can imagine that annoying look of your mouse cursor on your laptop - but the whole screen.
Hmm nothing really wrong with the Voodoo 5 if you can find one, their not the fastest but they work with everything - 3dfx has always had good compatibility.
I would personally get a good Nic, my number one choice is 3COM followed by Linksys.
I picked up Quake III from my buddy for 10 bucks about three months ago, never really played it but I decided to do some benching today.

Hmmm I know from working with the video out on my Viper II that you have to have all the video cables plugged in before powering on the system becuase the signal is detected at boot up, the TV/projector also had to already be on - otherwise the video out options were greyed out in control...
