my reccomendation would be to use a smaller drive for your root drive and a second drive for storage and maybe programs depending if the programs store important information in their program directory. you can also speed up the server a little by putting your pagefile on the second hard disc or...
raid0 is by far the fastest raid, but also the least reliable. if you're just concerned about speed and not the safety of your data, that's the way to go. a safer way to do it is to get 3 or 4 drives, a promise raid/ide controller card and use raid5. that way you gain both speed and redundancy.
