It's not very much more expensive to get Cat6 cable. I just wired my house and got 1000ft of unshielded non-plenum Cat6 for $78. I think it's like $50 for cat5e.
It appears that the 2700 procurves are unmanaged. One of my IT buddies recommend the HP's as well. What kinda of things would a managed switch allow me to do that an unmanaged can't. It will allow me to set preferences on certain ports and things like that?

If you don't have internet don't install any security stuff and don't keep the computer connected to the internet. You have nothing to worry about. Also don't download SP2 because thats' the main focus of the SP.
