I read somewhere that Defender uses Automatic Updates to update itself. When I was having this problem, I turned on Auto Updates, then tried to update Defender and after a few goes it seemed to work.

Are you trying to update via the windowsupdate website or are you using automatic updates?
I havent had a problem with that specific update. I have found that, if an update wont install via the website, then enabling automatic updates will usually work, and vice versa. Maybe give that a go if...
