Um, there is no extensions folder in Mac OS X. OS X doesn't use them. The only other place where any internet explorer stuff is would be in your Home Folder/Library/Preferences/Explorer
Wow you have been using Windows for too long. To remove them, just put them in the trash and empty it. Mail is just the one file and just trash the internet explorer folder. Why don't Macs have add/remove programs? Because they don't need it :D
