Worth upgrading CF HD6870 1GB cards?

For 1920x1080 your CPU is fine. I'd sell those and get a single card. But that depends on what you can get for them.

Are HD5870 crossfired enough to play games on 3x 2560x1440 Samsung SA850s?

Try running your monitors at 1920x1080 with your current cards and come back with your opinion. Try more resolutions. IMO 1080p is good even for 27" monitors with 3 monitors you don't sit close anyway. Then you can get two HD 7950/70 3GB and call it a day. You will be able to run some games on...

Apparently Perf/Watt matters only for some parts in your PC and not at all for others. If the part is made by AMD, the Perf/Watt matters if it's bad and it doesn't matter if it's good. If the part is made by Intel/Nvidia, the Perf/Watt matters if it's good and it doesn't matter if it's bad.
