At 1080p it will be quite a big difference. You should be able to max out any game and get 60+ fps no sweat with those cards. I noticed a good jump from my 570 sli going to my 670s.
That motherboard would do just fine with overclocking. You will probably want to invest in an aftermarket heatsink/fan if you do plan on overclocking though.

At 1440p maxed out and 2xmsaa I'm only going a little over 2GB vram usage on my cards. I would say if you wanted to to have some longevity to your purchase, like lasting you the next couple of years or something, I would definitely go for a card with 4GB+ vram.
I really hope this game has a more interesting main character than AC3. I couldn't hold much interest in AC3 whether it be connor or the random stuff you could run around and do in the game like fixing up your homestead and such. Hopefully this game will bring a fun new protagonist we can all...
I agree with this as well considering the R9 290 is making all this noise now (pun intended) with it's crazy low price of $400. I bet the guys over at Nvidia are either rethinking thier current price point on the 780 Ti or maybe looking to further adjust the prices on gtx 770 / 780 to get that...
I've been contemplating selling my 670's and going for a single GTX 780 Ti. Though I'm worried if I do losing out on that extra 1gb of vram playing at 1440p on my 670's if it would be worth it going over to the 780 Ti's 3gb.
At 1080p resolution your current cpu / gpu combo is fine. For more performance at the lowest cost I would say sli another gtx 680 in your system. If sli isnt an option, selling your gtx 680 and adding some cash in for a 780 / 780 ti would be a decent option imo.
Well i've gotten my qx9650 @ 4ghz (10x400fsb) and it fails prime after only a few minutes. Really looking for help to keep it at 1.36vcore by getting some help with GTL Ref voltage settings because I dont wanna go over Intel spec and heard these help a lot.
