Skymont was the original codename for what became Cannon Lake and Palm Cove. Given the cadence in naming between Atom and Core, that made sense. Now, Coves and Monts continue all the way.
There is no fixed guideline for that really. It just depends on how your marketing wants to spin it.
A "node" doesn't have a fixed meaning, much like the numbers mean nothing.
Xeon-E is only launched for every other consumer generation. They didn't do one for Alder Lake because they launched one for Rocket Lake already.
