Cooking chicken without it getting dry?

I cook 3-4 chicken breasts in the crock pot at least once a week, sometimes twice if my son dips into my stash. With the crock pot, in general all cook levels (warm/low/high) end up at the same temp, it's just how long it takes to get there. I'm generally cooking from frozen, 6-7 hours on low...
