I guess as I've heard a lot here it's the luck of the draw. My first ever overclock (not that long ago) was the L5639 on a X58a UD3 and it's still the best ever for me at 210 stable with 18x and even got to 226 for a day or 2.
Sold the chip on with a P6t and I only ever got it to 190.

For me, the chips are not the thing. My X5690 was $350 nzd landed which is ok.
In NZ the motherboards are just not available, so I have to get them from the states or wherever. With current exchange rate and freight they're more expensive than new mobos. Probably $500 landed for a rampage which...

So I'm running bclk 210 and super stable, 1.25V, up to 60deg under full load and doing 860 on cinebench 15.
My mb can only multiply to 18x though.
In real life using Archicad 18 my 1 minute test render (in AC18 it's totally in CPU and uses all cores) speeds up by 1 second for every +1 bclk...

After buying a Noctua D14, last night I managed to get it up to 3816Mhz - 18 x 212. (18 is max).
Temps under testing are around 70 max...
