What is good for wireless gaming ? What is wrong with my G5 ?

For the G5 - sounds more like a USB issue. Are you plugged directly into the motherboard (back of the case), or using a port on the keyboard/front of case? Try switching it around. Also try uninstalling any Logitech drivers you have loaded.

About fans, rpm, silence, etc...

ElFenix alluded to voltage fan control. You should be able to change fan control method in the motherboard BIOS from PWM to Voltage control for 3-pin fans. Just make sure you don't set your minimum fan speed under 50%. Check your user manual, not all motherboard fan headers offer this.

Put the 580 into your SLI box and test. I don't know what PSU you have in there but it's worth it to test before replacing the wrong part.

61c is not high (at load) for that processor. Definitely not low either, but that shouldn't be your problem. I would make sure the motherboard BIOS is the most recent, motherboard/chipset drivers are up to date, uninstall sound card, check motherboard voltages/timings/speeds to make sure...
