Notebook or Desknote?

Depends entirely on the application. If you're never going to be far from an outlet, but still need portability, desknote. If you need the use the thing away from power, notebook.

ECS Desknote comparison to Asus

$700-$800 for a full system, that is semi-portable with an external battery, and is more upgradable than the dell. Also, for the cheap dell, you will have to jump through rebate loopholes. I don't like that much, myself.

Would it be possible to 'mix' AMD chips and Intel chips?

No they didn't. Back in those days, AMD and Intel used the same socket for both their chip, because AMD licensed it from intel (I think). AMD then branched off from intel, because it would have been too much trouble to design their chip being limited to the technology that intel produced.

ECS Desknote comparison to Asus

You *CAN* buy an external battery for the Desknotes. Dunno how long it'll last though. Prolly not long.

Building my own notebook?

The ECS solution is pretty good, except for the fact that they require an external power supply/battery. After all is said and done, it's about $700 cheaper than an equiv. dell, but it weighs a lot more.

New DFI Boards?

Since every motherboard from them i've used has in SOME WAY been flawed, or broken, from purchase, I'm assuming that they, in general, make poor quality boards. Friends of mine have agreed with me. I also generally trust reviews, though I would read more than one, as well as customer opinions...

Me and everyone else I know have had nothing but trouble with DFI Boards. I cannot say that I know anyone that has had a good experience with them. As soon as I see a review for these new boards, I'll take a more serious look. Until every board by them I've handled isn't crap, I won't trust them.
