You can use a tripod, set it up for a reasonably long exposure and just wait. If you've got time lapse function, you can set it to trigger the shutter automatically so you can standby and let the camera do its thing. The ones I took were about 15 seconds long. Of course, if the wind is really blowing and you're outside, dial your shutter speed in.

Found a different method for those with Olympus or Panasonic. If you've got a camera that has Live (View) Composite, this thing is like magic and you won't really have overexposed shots because it's not going to keep the shutter open the entire time. It'll create a composite shot in camera adding just the brighter parts of the image to a base image. This doesn't exist for Sony, Nikon, Canon, as far as I can tell.

Olympus Live (View) Composite is great. Works well for fireworks too. 👍

it works for star trails too. it's a pretty sweet function

went trekking in Nepal up to Everest Base Camp (5364m/17,600ft). Probably my best shots of the trek is a sunrise view of the many of the mountains from Khal Pattar (I didn't go all the way up to the summit, but plenty high enough for a good view).

First one, I can't remember what mountain peak it is, or if that's technically part of Everest (my google-fu failed me as well).
Panorama has Nuptse in the center, and Everest to the left of that (black, partially obscured)
