Warning: several half-rants:
If you like all of any single genre of anything...you have no taste, not even bad taste. I will soon be off to catch the last 2hrs of Adult Swim, having skipped Futurama, so you know part of my position (OK, I will skip Inuyasha). However, I have yet to see any asian movie or television/video series that, despite some great stuff like Cowboy Bebop, can compete with the likes of Fantasia and The Dot And the Line. Unfortunately Lilo & Stitch is the closest this side of the world has come to getting back to making truly good work.
So let's see...
watch some Cowboy Bebop, Trigun & FLCL before you make any rash decisions.
Oh yeah, if you can still stand VHS, Robot Carnival is great. Being a God Damned American, I'm still waiting for an English dubbed DVD. Video should go with audio, even if it is inferior audio, instead of text. If I have to read, why should I bother watching?
Edit: oh, and Spirited Away. I don't like any new Disney stuff, but they did a great job dubbing (and marketting).
