From what I've read, the chances of getting salmonella poisoning are exceeedingly low, and there are a number of health benefits from eating raw eggs.

What health benefits? The main effect that I'm aware of is that feeding undenatured avidin (one of the components found in egg whites) to laboratory animals is how you can produce biotin deficiency in case you want to study biotin-deficient animals.

I've read that egg yolks have one of the highest concentrations of biotin found in nature so there's only a concern for biotin deficiency if you eat the egg whites only.

Yes, cooking denatures (deactivates) the proteins in egg whites. Is there a reason why this would be a bad thing? In some cases, this is a good thing.

Egg yolks are, indeed, a very good source of biotin, which is another reason not to eat raw eggs. The biotin from the yolk combines with the avidin from the white into a form your body cannot digest or absorb. In small quantities, this just means that you are not getting the advantage of either the biotin or all the proteins from the whites; in large quantities, I expect it would make your intestinal bacteria very happy (and those around you rather unhappy).

I suppose you could eat just the yolks and/or cook just the whites. Still not sure what the advantage is of uncooked eggs, though I suppose the fact that egg white proteins are albumens (no surprise) would mean that uncooked egg white proteins would be digested and absorbed faster. Whether this is a good or bad thing is another issue.
