I've got about 5.5 pounder dry aging in my fridge right now, been about three days so far. I don't plan to cook it for another week or so, and it should be simply amazing by then.
I had it at work since Thursday, but the coolers are apparently too humid as it wasn't drying out as well as I thought it should. So I took it home tonight and put it in my fridge.
I did a smaller one in about 5 days and I wish I had left it longer. This one should have about 10-14 on it before I'm done, that should be plenty.
