i normally just use a combo of soy sauce, liquid smoke, some worcestershire sauce, brown sugar lil oil and S+P

IDK that's what the recipe i based it off of called for, its only like a tablespoon of veggy oil. TBH IDK why its there

Are you guys using the oven or a beef jerky making machine (if so, which one)? Love jerky, but hate paying $15+/lb. The Costco stuff is cheap, but I've had way better.

i have a food dehydrator, its not ideal but works fine for my lazy ass, set it on a low setting and wait a day or so

I don't follow an exact recipe, but this is generally what I do:

For the marinade, you'll want to use something like 3 parts soy sauce to 1 part Worcestershire. That makes a good base marinade, and from there you can make any number of modifications based on your preference. I like to add ground black pepper and garlic powder. If you like your jerky spicy, you can add crushed red pepper, powdered habanero, or your favorite hot sauce. If you like your jerky sweet, you can add brown sugar or honey. If you like your jerky peppered, just add more coarse ground black pepper. If you like your jerky smokey, add liquid smoke. If you like terryaki, add that in there too.

You'll want to marinate that for 24 hours minimum, 48 hours is even better. Give it a good stir mid-way through to get everything evenly marinated. What I usually do is marinate everything in a large tupperware container with a good seal, so you can just shake the whole thing.

I make my jerky in the oven, so when it's done marinating, I lay out the strips on paper towels to soak up any extra marinate, then I skewer them on bamboo skewers (you can buy these at the super market for a couple bucks). You want to put one oven rack on the very top slot, and one on the very bottom. Cover the bottom rack with tin foil (to catch drips and make clean up easier). Hang the strips from the top rack, and turn your oven on to the lowest possible setting, which should be somewhere below 200 degrees. Leave the oven door open a crack - you don't want to cook the jerky, just dehydrate it. If your oven door won't stay slightly open on it's own, a beer can or 2 works great It will be anywhere from 3-6 hours until the jerky is ready, depending on your oven.

The recipe is probably using it as a base for the marinade. Use water instead. It absorbs INTO the meat better, and doesn't add any oil/fat to the jerky.

Dehydrator. Was my Christmas present two years ago (wanted one anyway). Set to high (165F) and dehydrate away for ~6-8 hours depending on thickness of the cut.

it turned out very good. taste like the standard beef jerfky at the store to me. the only thing i wish it had in it is coriander seeds. i'll post some pics later.

i used london broil from costco. and lucky for me london broil is now on sale at safeway for $1.99 /lb and i still have my marinade.

i used the oven at 170, hung the pieces from toothpicks on the grill and cracked the oven door. the thicker pieces took much longer.

for my next batch i'm going to cut the slices of meet 1/8" so it will cook faster.

got 2.5 lbs of London broil got it home and though "doh! should have seen if the butcher could slice it" heh leason learned.

got it in the marinade. a really basic one. 1 part worty souce and 3 part soy souce then a pepper and red pepper flakes.

monday i will be home alone and can make in the oven.

Deer jerky is better if you can get your hands on some deer steaks...They're a lot more lean which is very important when it comes to making jerky.

ugh i couldnt wait until monday to make it. i put it in the oven at 2pm (over 24 hours marinate).

pulled it out and its great. but a little to salty. think the problem is i forgot to wipe off extra marinade
