What is the advantage of ceramic as a knife material? Makes it easier to smuggle them through metal detectors?

a lot sharper, should never lose the edge either.

disadvantage is that they're brittle.

Looks like it's not just the link, I can't even get to their site from the net.

Link is working for me - didn't check prices on their site vs the normal discounters, but coupon worked for a random sampling of items I put in - have to go all the way to checkout to see discount.

If you want to "test" a ceramic knife, Harbor Freight has a couple in stores for about $8 to $10. Some like them, others won't touch them, too fragile. Never use them against a hard surface.

Quite sharp and stays that way. If you chop too hard it could chip or break. If you drop it then it's most surely done for.

If you're dropping your knives while cooking though you have other issues.

I think I might have a set of "ceramic" knives already then. I bought them off of Woot a while back. They are in storage atm but I remember them being really light. It had a butcher knife too but it was too light for me to even consider using it's to overhand chop anything hahaha

But yes, these are indeed sharp >.> I bled myself a little testing one when I first got them They are sharp!

why are ceramics sharper then metal though? i think i can understand why ceramics dont dull like metal does, because metal at the edge of the blade has almost like hairs that constantly need straightening (honing, that why you always see them sharpening the blades one way, theyre not really taking off any metal theyre just straightening out the hairs at the end, which makes the blade very sharp.

but of couse, you cant cut anything hard with ceramic. i think thats the real reason they dont dull. if you cut nothing but fruits and bread with your metal knives you might be shocked to see that they never dull either.

I"m too rough with my knives to be able to use ceramics. I'm never dropping them, but occasionally I do toss them onto the counter when I'm in a hurry.

I used to use mine to cut meat like pork and steak for stir frying. They haven't lost the sharpness after months of usage. They're in storage now cause I'm staying with relatives atm.

PROS:
1.) Ceramic Knives don't leave microscopic bits of metal in your food .... which causes your apples to turn brown and lettuce to wilt after cutting them.
2.) Ceramic Knives are harder then metal and don't need to be resharpened as often.

CONS:
1.) They are expensive.
2.) Lack flexibility so you can't bend them like a fillet knife.
3.) Not malleable/shock resistant like traditional stainless steel knives. If you drop it on the ground it will shatter like glass.
4.) Require Diamond tools to sharpen.

Basically, its an ideal knife for anyone pursuing a vegetarian life style or anyone that prepares sushi.

Thanks for your post, ZGrinch. Ceramic knives are non-reactive with food. For health nuts, that's one of the biggest selling points.

I'm in for a set for $25 shipped (5.5" Knife and Peeler).

I own several of the brightly colored Kyocera knives, and I agree that they are useful for just about everything we do in our kitchen, which involves a lot of grilling (meat and everything else) and baking. Some of the lighter colors (especially the yellow) tend to stain easily with tomatoes and the like, but I've found that if you wash them RIGHT after you use them (literally the second you're done, not 30 minutes later), they won't stain at all. I have not tried them on anything too hard though, but they've handled everything we've thrown at them so far.

giving the rosewills a shot; 20 bucks for a set of 4 ceramic is nice, especially when i'm using what essentially amounts to sharp plastic for a knife to cut fruits and veggies

I read an experienced fine knife user and seller say that you have to be very careful with ceramic knives because they are VERY sharp, and you can cut yourself easily clear to the bone if you are not careful. I think even he had done this.

Yes, ceramic is harder than stainless steel.
