1) Substitute rice milk for the milk
2) Bake this in a pan normally used for brownies (foot wide, foot long, 3 inches tall?)

No. You can't substitute rice for milk. I'm no scientist, but where's the fucking moisture?

The rice milk might be okay? It might make the bread taste different, but I don't know how rice milk tastes. If you use a brownie pan, it will probably spread out to fill the pan, and then rise a bit. It won't look like an actual loaf of bread, but that's not important.

For certain recipes rice milk won't work, but for bread it will be okay.

As for the pan, it might screw it up. The recipe is built for a certain size and shape. By spreading the dough over that much more surface area it's not going to get the same rise and it's going to cook a whole lot faster.

maby mix some melted butter with the rice milk? i think milk is there for its buttery/fat/protein content.. not just as a fluid

you can aubstitute rice milk for milk, or water howerver I would mix a table spoon of butter or olive oil to help with moistening the bread.

IIRC, there is no rice tit, thus rice milk cannot exist. Neither Rice Juice nor Soy Juice are not a real substitute. Use milk unless you have lactose intolerant family members.

I'd try almond milk or soy milk before rice milk. Rice milk is literally rice and water.
