Chicken Wings?

How would I go about making some delicious hot/spicy chicken wings, in the oven!

I heard add some dry spicy heat to cornmeal and roll the wings around in it, but is it hot enough? I love heat!

Sigh, I need direction.

Find a chicken, chop the wings off (they aren't using them anyway), discard chicken. Place wings in oven, cook til done.

Watch the episode of Good Eats about wings. Usually if you bake wings in the oven they will smoke, so in the episode he steams (i think haven't seen it in awhile) them.

As far as recipe i always use Franks Red Hot and some butter (If you want it less spicy add more butter)

To carry the heat and flavor of the chile, you need oil/fat/butter. An acid like lemon juice/vinegar will also add to the sharpness. Try marinating in a plastic bag in the fridge for an hour before cooking. No need to get exotic, cayenne is your friend.

Well there are quite a few ways to make hot wings. Some people cook them with the sauce some prefer to put them in the sauce after they've cooked. I personally prefer to put them in the sauce after they've cooked. So brown your wings however you like, bake, deep fry, fry and then dunk them in this sauce:

1 half bottle of Frank's Red Hot
1/2 to 1/4 of a bottle of Tabasco Habanero hot sauce
approx 1-2 teaspoons of garlic powder
a dash of Worcestershire sauce
a dash of Soy sauce

Put it all in a sauce pot and let it simmer for a while. The longer it simmers the hotter it gets due to the removal of the water from the mixture. I usually let my mixture simmer for about 15-20 minutes approximately. At the end put in about 2-3 tablespoons of corn starch to thicken it up. Let it cool then put it in a bag or tupperware container. Drop the wings in and shake.

Traditional Buffalo Wings sauce is a mixture of Franks Red Hot and butter. I mix some flour, salt, pepper and cayenne paper and dredge the wings in it prior to baking. That helps the sauce adhere better later on. Bake the wings at 375-400 for about 40 minutes. A couple of minutes before you take out the wings melt butter with an equal part of Red Hot. Drop the wings in the sauce and swish them around to coat, then serve. It's really easy. If you want them mild use 2 parts butter to 1 part Red Hot. For spicy go 2 parts Red Hot to 1 part butter. For super spicy add some extra cayenne pepper to the sauce mixture.

I've never cooked wings before and was walking through the store and saw a huge like package of them, I imagined the tastiness in meh tummy:awe:

Hmm, what form of alcohol shall I choose to enjoy with my wings, I imagine they'll taste even better if I am drinking a lot.

Count me in. There is so little meat they're a waste of time.

That's precisely what makes them so good in this application. They have a very high surface area to meat ratio, so when you slather them in Buffalo or BBQ sauce the flavor of the coating shines through in every bite. I've tried doing Buffalo legs or breasts and it just isn't the same. Too much meat to too little coating.

This is the recipe I use, but the tabasco/habenero sauce is honestly not needed. Franks hot sauce is already loaded with tabasco, and habenero is just flavorless heat. Just get the "HOT!" version of Frank's sauce if you want it hotter.

not a fan of super hot spicy stuff so that might be why i don't care for them.
although, i do have to agree with the small amount of meat. I prefer breast meat.

i take wings, deep fry dem suckers, then toss them in a bowl with sweet baby ray's. put some ranch or blue cheese dressing out with some carrot sticks and munch for lunch.

You bastards are making me hungry. Anyway I make a mix of 1tbs melted butter, 1/4 bottle Tabasco, 1 tbs black pepper, a couple dashes of garlic powder, a lot of cayenne, a dash of vinegar and use it as a marinade for about 1/2 hour. I then heat the oven to 450 and cook for about 20 minutes. Remove the wings, slather in Wing sauce of your choice and consume.

I'd like to know how restaurants do the Asian style wings (think Buffalo Wild Wings Asian Zing flavor).
