The recipe is for a whole chicken, but it works for wings or legs too. Just make the sauce, marinate overnight, and cook them slowly on a grill, with applewood wood chips. Great smoky, spicy flavor. But ALWAYS wear gloves when handling the scotch bonnets. The first time I made jerk, I didn't do that. Even after scrubbing my hands over and over with soap and water, it still burned when I rubbed my eye like 4 hours later.
