Take the business courses anyway - you just would have to rely on registering the first day of classes. If you complete the degree requirements the school would be inclined to grant you the degree. Make sure you're in an arts & sciences degree program as well so that the school won't give you grief.
I second the economics recommendation (Bachelor of Science Econ, Univ. of Washington, 2005), it's a good complement to a business curriculum.
Im just not sure if I can actually get the degree if I am not offically in Their School of Business, but I suppose that would be something I would have to ask a counsler.
