Cub foods out by me regularly has ground beef for $1 per pound. Perhaps he can spend $5 on five pounds, and then make five meals each costing $1 per pound of the ground beef.

i already make that. a lot.

Rosemary Baked Potato Thingys

10lb bag of potatoes - .79 on sale or even free sometimes
olive oil
fresh rosemary
salt
pepper

dice the potatoes (about 4-5) into 1" pieces and place in a large bowl
coat with olive oil
add the rosemary
add some salt
add pepper
mix it around a bit until it's all coated

Lay those in a foil lined baking sheet and put in a preheated 400 degree oven
Never sure about how long to leave it in there. . . 20-30 min?
It makes a great side dish with that Chicken fried steak.

Red beans and Rice! Just made some using my handy dandy new microwave rice cooker. I meant to save some for tomorrow but, I ate it all.

Cook rice according to the instructions with cooker.
Put rice in serving bowl
Add Olive Oil, Soy Sauce, 1 can of red beans.
Season to taste with Habanero

It's cheap.
It's fast.
It's delicious.
It's probably as good for you as food can get.

I should have gotten the microwave rice cooker a long time ago.

Big bag of egg noodles (any type and store brand are the same as most name brands) = about $2
Big log of velveta cheese - $3

Mac n' cheese whenever and a portion size you decide. Some milk may be necessary to thin out the cheese sauce and make more servings.


Next item:
ground beef - the gateway to Texmex.

Skillet lovin' beefy bake
You need a cast iron skillet or a dish that can be put on the stove and in the oven.

1 pound ground beef
1 can of black beens (or buy the dry bag of beens and soak them for two days - cheaper but not quick)
1 can of tomatoes. yeah, fresh is better but the ones they sell at the store are back to being the hot house ones and are not tasty at all.
Spices like pepper (black and red), chili powder. Anything you like in a tex-mex way. about a teaspoon per spice.
Some of that good old velveta cheese
One onion or a 1/4 cup of dried onions.
One can of biscuit dough.

0) Preheat the oven to 350 or 375 (read the heat level on the can of biscuits)
1) Brown the beef and drain the fat.
2) Dice the onions and sweat them (two minutes in the skillet on medium heat.)
3) Put the beef back in the skillet with the onions, tomatoes, beans, and spices. Let it all cook on medium heat for 10 minutes. (If it begins to boil, turn it down low enough to simmer - very few bubbles.)
4) Slice or shread some of that good old velveta (or any cheese) and sprinkle it on top of the mixture.
5) Open the can of biscuits. Take each biscuit and slice it in half, through the middle so you have two smaller biscuit circles. Place each small biscuit on top of the mixture in the skillet. You may not have the entire skillet covered with biscuits, so just try to cover as much space as you can.
6) Put the skillet in the oven and bake for as long as the can of biscuits says + 5-7 minutes

This is good by itself or forget the biscuits and throw the mixture into a taco, burrito, or with some sauce, an encilada. Can be frozen for two months or in the fridge for two weeks.

Here's an easy & tasty one for ya too.

Home Made Stroganoff

Bag of Egg Noodles
1 pint sour cream
1-2 pints heavy cream or milk
2-3 tablespoons butter
1 tablespoon flour
1/2 - 1 lb of sirloin or similar inexpensive cut of beef

Melt butter in skillet, add the flour, cook for 1-2 minutes until mixture starts to bubble and turns light brown.
Add the milk or cream stir until well mixed. Stir occasionally
Cut sirloin into thin strips across the grain of the meat (dredge in flour if desired), cook it in a frying pan w/ some olive / vegetable oil until browned, remove from pan, drain on paper towel.
Cook Egg noodles & drain.
Add sour cream & meat to skillet, stir until sauce thickens to desired consistancy
Season to taste w/ Salt & Pepper
Serve over egg noodles

It's really pretty easy, tastes great, and 1 batch is usually good for a few meals.

go to amazon, and buy one of those "college cookbook" things. my roomate's mom bought us one, and the recipes are cheap as hell, and damn good.

beef and veggie soup..

beef boullion cube
veggies of your choice
lean ground beef
can of tomato paste
salt
peper

throw it all into a pot of water.. boil.. enjoy...

for quick things, you can get some hamburger helper.. get a huge pack of ground beef and divide it into ziplock bags.. one pound each... umm. keep some pasta around and some sauce.. those last forever and cook real fast.. frozen chicken breasts make an easy dinner.. oh.. something quick that i used to do was boil some spagetti.. melt some butter in a pan.. throw some diced garlic in.. salt.. pepper.. when the garlic starts to brown slightly (happens fairly quick and don't let it burn, it'll taste bad) throw the spagetti in.. toss it around, and you have some good pasta.. eat it alone, or have a chicken breast with it.. tasty dinner

I ate a lot of spaghetti when I was living in my own apartment in college. I would cook up a big pot of sauce, freeze most of it in tupperware except for what I would use in a weeks time.

Boneless, skinless chicken breasts
Swiss cheese
Ham (from the deli)
Italian style bread crumbs
Salt and pepper

Pound the chicken to 1/4 inch thick, sprinkle both sides with salt and pepper
Place ham and cheese on top of the chicken, roll it up and stick it with a toothpick. Sprinkle bread crumbs over it

Bake it for 30-35 minutes at 350, and then take it out, put another slice of swiss cheese on top and bake it for a few minutes more, until the cheese is melted.

Chicken cordon bleu. Yummy!

My bf and I are also in a college apartment (ours is a house, though). I've found this website to be really good for finding quality recipes.
