I envy you. I have never had a fresh east coast bagel before. I had one my dad bought that day and flew back and gave me, and it was still delicious, but never a fresh one.
It's a great day when you get to the bagel shop and find several batches 20 minutes out of the oven. You bring those things home, eat one or more, then immediately freeze the rest. Next day about a minute on defrost in the microwave and it's like they just baked it that day.
