There is a looong thread on the EVGA forums, and if I remember the consensus was there is no way to do it. Look into getting an NV Silencer 5 Rev2 or 3, or its Zalman equivilant.
Doesn't Rivatuner control stock fan speeds? I know it did on the 6xxx series, but I never tried it on my 7800gt (I bought a vf-700 with it). Download Rivatuner and give it a try, its a handy program to have anyway.
It's loud on bootup and in games, but it's quiet in Windows. Mine runs so cool anyway I think I could get by with the Windows fan speed in games and the lowest fan speed in Windows.
Why is the gt co so much louder than the GTX? When I went from my gtx to gts in sli, I couldn't belive how much noise they made. I could hardly hear my old GTX.

I moved from the GTX KO to a pair of GTs as well. The GT CO uses the same fan as the GTX.
According to the info I got from the eVGA forum, it was because the GTX comes with hardware fan control, and the GT does not. Instead, the fan speed of the GT is controlled by software, and so it wouldn't be quiet until you are in windows until Nvidia drivers kicks in.
I have two of these cards and set them up yesterday. They are quite loud on startup, but once the drivers installed they automatically quiet down a lot after Windows loads and don't seem to change their fan speeds much even in games. I didn't have to do anything with BIOS flashes or Rivatuner.
