You could try it. Worse case scenario is that you toss an inedible loaf to the birds.
Substitute rice [brown or white], potato or tapioca flours [or a combo] for the brown & white wheat flours in the recipe.

Bread flour is higher in protein and will give the bread a better rise, resulting in lighter fluffier bread. King Arhur is the best if you can find it. SAF brand instant yeast is the best for bread machines but do use instant or fast yeasts made for bread machines. I have a *lot* of experience making bread machine bread. BTW, the Breadman Ultimate is the best machine I have ever had and I have had a least a dozen

the question is at my costco...they have the 25lb enriched white flour (con agra brand)
and the 25lb bread flour also made by con agra as well...but they are both bleached if you use the bread flour do you still need the wheat flour..

I don't think this recipe will convert properly... for one, GF bread mixes tend to be more batter-like than dough like. They only rise once, and you will need to add something to make the bread stick together like xanthan gum and extra eggs. It would be better to start with a known working recipe than have to adjust here and there several times.

Also, you can't just throw flours together and expect it to work. Some flours work better together than others. You will need to use a mix of flours to get a good bread, though. The last bread I made had the following flours/starches:

Brown rice flour
Sorghum flour
Tapioca Starch
Corn starch
Garfava flour
Flax meal

I can't remember the recipe off the top of my head, but if you want it I will try and find it for you.

edit: garfava flour is actually a mix of 2 different flours: Garbanzo bean flour and Fava bean flour.

yes that would be nice...also to the poster that said use quick yeast and bread flour...the guy thats like 140 years old at the jewish bakery down the road...says your full of it. I dont know anything about bread...But when i mentioned that he said to truly make this good...use all natural unbleached flours. red star yeast (alot of professional bakers use this)

he also said don't use a bread machine but. hey, I know nothing about bread...Now you ask about cakes on the other hand. Also in my manual it says don't use fast yeast either.

has anyone done purely with whole wheat flour? i have an allergy to the enriched/white flour for some reason.

I hope you didn't use that to make bread for your GF, regular flour aka wheat flour is FULL of gluten, not suitable at all for someone who needs to be on a gluten-free diet.

How good a machine can it be if you've run through more than a dozen machines in how many years?

A good machine should make great bread AND be reliable enough to last.

I hope you didn't use that to make bread for your GF, regular flour aka wheat flour is FULL of gluten, not suitable at all for someone who needs to be on a gluten-free diet.

No I didnt...This is the first loaf and was a test loaf its for me... But I messed it up...
The bread turned out fine but I had the crust on medium instead of light and its a little hard for my taste. The bread is pretty dang tasty. But I mis measured some stuff. Mainly the sugar. When I wrote down the recipe I wrote 2 teaspoons and not Table spoons.

Also any ideas how to keep brown sugar fresh besides re vacuum packing it. Cause brown sugar always goes hard and when you throw it in the micro it gets soft again.

You can store brown sugar in a cannister or jar. To keep the brown sugar soft, bury in with the sugar a very small terra cotta saucer [or commercially sold sugar bears, etc] that you've previously soaked in warm water for about 20 minutes & patted dry. The brown sugar will stay soft for several months. When the sugar starts getting hard, simply repeat the preparation process for the terra cotta saucer & replace it in the cannister.

So now that its already hard any ideas to make it soft again? Also would vacuum packing it keep it soft.

Since you (or anyone who cares to answer) are familiar with bread machines, can I ask how long it takes to make a loaf. I'm talking about actual hands-on time, not baking time. I have made literally hundreds of loaves of bread, but always the "old fashioned" way, bread board kneading, etc. I figure I have to devote an hour of time to make a loaf, approximately. How much time is necessary to devote (besides waiting to rise or bake) to make a loaf with a bread machine?

I'm glad to see that everybody knows so much about bread, flour, breadmaking and of course, breadmakers.

When you get to this point, please let us know what you did to duplicate or best it!

In the mean-time, don't hesitate to thresh around with any failures and avoid the exacting directions given in the first post.

The Breadman Ultimate Model TR4000 and the Zojirushi (Model unknown as I haven't used it) are apparently the two top-tier breadmakers.

Check Salvation Army, GoodWill, DAV stores, etc. for any of these.
Also, Craigs List.

I just bought a new Breadman TR2500BC online and a good book, Bread Machine Magic, Revised Edition, also online. Guess I'll stop making bread the old fashioned way. I'd figured out, it took me an hour to make a loaf. I'm really too busy to justify that, but don't want to spend $4 on a loaf at the market. I make pizza too, and hope the Breadman will make that easier.

Note: The bread I'm in the habit of making is similar to the OP recipe except for these things:

1. I add no oil
2. I add an egg
3. I add some dry milk powder (non-fat), so that in effect I use milk instead of water
4. I add 1/2 cup of pumpkin seeds
5. Instead of 2 T packed brown sugar, I add 3 T white sugar

Yes, it makes fabulous toast. I add the egg and milk to assure adequate and complete protein. Vegetarian protein sources are generally incomplete unless supplemented with essential amino acids. My thinking is that the addition of egg and milk accomplishes this.

You can add brown sugar or honey instead of white sugar, but I don't think the nutritional aspect significant or that you're going to notice a taste difference in a bread recipe such as this, so I just add white sugar.

Edit: RideFree's bread (see his link) looks beautiful!

Best place to find a Bread Machine is a rummage sale or Craigslist. THere are tons and tons of people who buy them, make one loaf, and never use it again. Might even be able to find one at Freecycle.

Hmm, that bread looks really dark. Is it considered Wheat bread? I prefer white bread by far. Hmm.

I read this thread a LONG time ago and just got around to trying it.

Good stuff. I made two batches today with this recipe and am currently trying some Jalapeno cheese bread that smells FANTASTIC. Thanks for the inspiration!

This thread inspired me to get a breadmaker. I now have it. After a good amount of searching I found the thread again (it was in Hot Deals at some point, or linked from it) and now I'm going to buy ingredients and get cookin'.

By the way, check your local Goodwill store if you have one. I got a Breadman ultimate TR 700 for next to nothing and it was BRAND SPANKING NEW, never used.

EDIT: Tried the recipe and everybody loved it. It's great to have a nice, easy recipe that everybody loved on the first try. Thank you again OP.
