But, he can change the nameservers and has changed them to the ones you've given me with my free hosting package (domain included.)
I was wondering, after he's done this and the 48 hour grace period has passed, will I have control of the domain name? If so, how? What exactly do the nameservers do?
I'd ask him these questions, but I fear I'd only annoy him considering all I've asked him already.

Didn't know that there was a 60 day rule.
Anyways, what nameservers do is they tell a domain what server it should point to. That's about the extent of their role. As soon as the domain is pointed to a server (mine in this case) you can control anything that shows up on the website by changing settings on the server. That's escentially what cPanel does, it makes changing all the settings related to your website easy using a control panel. Basically as long as nobody changes the nameservers it shouldn't make any difference whether you own the domain name, or he does.
