How about trying fajitas?
Pretty simple:
Wal-Mart sells preseasoned chicken in turquiose-colored plastic bag (can't remember the brand name but should be really easy to find! )
Get two packages of that
red, green, yellow and orange bell peppers
a large onion
tortillas
shredded cheese
shredded lettuce
sour cream
salsa
Cut the chicken into thin strips and cook it until it's done all the way through.
Cut the peppers and onion into thin strips and toss 'em in with the chicken until the veggies are tender.
It'll make a more attractive dinner if you put out the chicken/pepper filling, lettuce, cheese, sour cream, and salsa in individual bowls with serving spoons and then you two can assemble the fajitas at the table together.
Any side items like refried beans, etc. that can be tossed in a bowl, microwaved, then served are great too.
This is easy and looks like you went to a lot of bother.
