I've been brewing for about a year and a half. I switched over to all grain in December, though I use the brew in a bag method because I'm still in an apartment. That will change once I move to a house in the next couple years.

I've made about a dozen batches of beer (3 AG) and and 2 batches of cider.

My favorite extract beer was was the wheat beer kit from Northern Brewer.

My favorite all grain batch has been:

1 oz hallertau (@ 60 min)
SA-05 yeast
1/2 cup flour (@ 5 min) <- for haze


~3.5 gal mash @150F
~4.25 gal sparge @168F
(accounts for water loss, as determined empirically.  Comes out pretty close)

60 minute boil

Primary 7 days
Secondary 14 days

I bottle, and use corn sugar.  This beer got good at ~10 days after bottling (right level of carbonation and flavor)

~5.4 ABV hazy wheat beer. When I bottle the batch sitting in secondary right now, I'm going to try adding blackberry extract. See how that goes.

I've also been (as noted above), messing with cider. My 2 batches have been using the Whole Foods apple juice that comes in the glass bottle. I used a hef yeast for the first one (interesting flavor) and a nottingham in the second. The first came out odd. My uncle loved it, but he was the only one. The second batch I tried to backsweeten so my gf would like it. I ended up putting 2-3 tbs (2, 2.5 and 3) of apple juice concentrate in each bottle. After 3 days the 2.0 tbs was perfect taste, not enough carb. Let it sit longer, 6 days after the 3.0s all exploded. The rest all gushed, so no pasteurizing them to save them. When I finish my experiments with it (a couple more batches) I will likely post my results to homebrewtalk.

Just found out about this thread, I thought I'd make a contribution. This is my red ale recipie, it's a little hoppier than most but everyone seems to love it.

You could do a starter instead of using two packages of London Ale. My recipes all assume a starter, but I always post them with 2pkg of yeast. I keg at 2.3 Vols of CO2. If you don't keg, prime with 4oz of corn sugar. I ferment for 3 weeks in primary, then cold crash for 48 hours and rack directly to a keg. I then carbonate for 2 weeks before consuming. This beer gets much better as it ages. This is version 2, version 1 omitted the 10 minute hop addition and was also very well liked.

FWH means first wort hopped. This means the first addition of hops should be made to the empty kettle and you should drain your mash tun and your subsequent sparges on top of these hops. They stay in the kettle throughout the entire process.

Might as well do one more. This is another favorite of mine, it's a Cascadian Dark ale (black IPA) that leans to the roasty side.

You could do a starter instead of using two packages of London Ale. My recipes all assume a starter, but I always post them with 2pkg of yeast.

This beer should be drank as young as possible. It does age well, but the hop aroma can be overpowered by the roasty notes if you let it age too long.

Any of you guys brew small batches (2 gallons or so)?

I usually brew ~5 gal. batches as that's the size of food grade buckets I use. It makes about two cases plus a six pack. Larger batches are more tolerant of temperature and possible mold/yeast problems.

Case = 24 bottles?

Given 12 oz bottles, 5 gallons would produce about 53 bottles. That'd last me 2 months.

Yes, that's right except for the lasting you 2 months part. Brewing is addictive and makes you want to share the good stuff with the great unwashed swilling Bud etc. Bigger brews (higher ABV) also take longer to brew and greatly benefit form aging. The solution is to start a new batch at least every two weeks.

Northern Brewer has 1 and 3 gallon kits I believe. The problem is that you will spend about the same amount (if not more) on a carboy and bucket and such because they are odd sizes.

I ordered some more base materials to make a couple of red ale's one of them will be a malty red one...the other one is a bronze/red with some caramel to it...

After that it will be on to the blueberry ale, that one i am going to do from a kit to see if I like it. If so, then I am going to take my bavarian style wheat ale and make my own blueberry ale..

I am brewing about 2.5 gallons (sometimes 2 gallons) at a time right now. Nets me between 15-16 beers on average, which is good for me.

What I did was I started my very first batch, after a few weeks of brewing it was time to bottle. After I got it all bottled, I cleaned and sanitized all my gear and made a wheat ale the same day...

My Pale Ale was done settling and carbonating after about 3 weeks, which was perfect for my wheat ale as it was finished, so I was able to bottle the wheat today and now it is sitting...started my pumpkin ale today when i bottled the wheat...


long story short..I have 7 bottles of my pale Ale left chilled in the fridge, they will be gone by the time my Wheat Ale is ready to chill and drink, the same day my Pumpkin ale will be ready to bottle..I will have 16 of the wheat to drink until my Pumpkin is ready to bottle.

With only 2 gallon batches you have to keep brewing a lot to keep your stock up so that there isnt a gap in between batches and what is ready in the fridge.

Next after the pumpkin is my red malty ale, then a copper ale...then on to a blueberry ale...

If I like the blueberry, I am going to try a wheat based bavarian style (think Blue Moon or Allagash White) blueberry...

I only do 5 gallons, but I have thought about doing 1-2 gallon test batches. I do 5 gallon because it's the size of a corney keg.

Going to give batch #0 a taste this week. Going to save the majority of it for March. Hopefully we'll get another batch going sometime before the end of the month
