It was/is a PR thing. The girls that made the posters and ads generally really did start out as servers and got 'discovered'. But they are/were rare. Most of the servers are just the same people you'd find at Cracker Barrel, Dennys, Red Lobster, Fridays, Olive Garden or anywhere else.
There was a story once about a bunch of SnobMom residents complaining about the place, tring to get the one in their town closed. There was some kind of town meeting, maybe a PTA type thing. A bunch of the servers showed up with their kids. They were all dressed like the rest of the Moms and blended in with the crowd. It wasn't until later in the meeting that they disclosed where they worked. The whole thing got dropped once the snobs found out the servers were real working Moms just like them.
