It was/is a PR thing. The girls that made the posters and ads generally really did start out as servers and got 'discovered'. But they are/were rare. Most of the servers are just the same people you'd find at Cracker Barrel, Dennys, Red Lobster, Fridays, Olive Garden or anywhere else.

There was a story once about a bunch of SnobMom residents complaining about the place, tring to get the one in their town closed. There was some kind of town meeting, maybe a PTA type thing. A bunch of the servers showed up with their kids. They were all dressed like the rest of the Moms and blended in with the crowd. It wasn't until later in the meeting that they disclosed where they worked. The whole thing got dropped once the snobs found out the servers were real working Moms just like them.

Kinda sad since the Hooters in Santa Monica on the promenade was my go to in college for watching Spurs games since I couldn't afford cable at the time. Way cheaper to buy a big spread of wings and a Coke than go drink in a bar for 2 1/2 hours. Most of the menu was pretty bad but the Three Mile Island wings were always great. Of course haven't set foot in one in decades now. I hated the fake flirting but I guess that was supposed to be the whole draw of the place.

I have only been once in the 90s. Some guys I met in the IT courses I was taking at the local campus invited me over for lunch after class, as it was across the street. Food was the typical product off the truck, prepared as you'd expect for a busy time of day. Girls knew their game and made a point of putting their hands on you at some point. Calling you honey, sweetie, something like that. I tip good no matter what, but if they think it influenced me that's cool too.

I like good food if I am paying the markup to eat out, they don't have it.

BTW, I LOL'd hard when I read the quip about Shorty. Almost forgot he was stalking a server and had to pull his prosthetic penis and blow a load in the parking lot because another customer tried to shoo his creepy ass off.

you know it's funny but food is cheaper here than in italy. ITALIAN food is cheaper here than in italy.
I have a delivery guy for beef, bones & jerky, i have a delivery guy for croatian food, i've never even met another croatian outside of croatia and yet i can get my Kraš Bajadera
delivered right to my doorstep in Swansea.
I got a delivery guy for oxtail, tripe and turkey wings, a delivery guy for sushi ingredients, i got every delivery guy you could wish for, for every chinese or thai product.
there's an entire street filled with cash&carry suppliers for indian food, there's four!! cash&carry for chinese food one next to the other within walking distance of my house, an afro-caribbean delivery, a french delivery, Amazon sells every spice in the world by the kilo-bags, i can buy a whole pork cheek of even half-a-whole-cow, and yet with all this marvellous bounty these guys still eat beans on toast.
