knife sharpening? Stone or gadget?

I suppose purits will say get a sharpening stone.
I have tried them a bit and I simply don't think I can hold the knife steady enough and at the correct angle.
Should I just learn how, or is there a knife sharpener that is actually pretty good?

If you cannot maintain an angle, you will ruin your blades, wont get a good sharpening and improperly wear down your stones. Do yourself a favor and get a gadget.

Years and Years (decades, really), I bought a Lansky sharpener - Basically sharpening stones on a stick with a clamp that holds the blade and stone at set angles.

Works beautifully for working~sized knives (razor/hunting/folding/smaller kitchen). You can easily put a *seriously* sharp and polished edge on anything in that range. But less great for large carving knives, since you have to do a section at a time.

I have this. $38. It's fantastic and I sharpen everything with it. I typically just use the 1000 grit on my knives and don't bother with the 4000 because I like a little bit of bite to them still.

I will use the 4000 with a knife to build up a little bit of a slurry and then use the 4000 to sharpen my straight razor too.

Even bigger fan of a Chef's Choice electric sharpener. Model 110 is bulletproof.

I cook a great deal and own good knives. I sharpen with a stone at most 2 times a year the rest is on a German steel or leather strap. Arkansas stones are a great standard. I use mineral oil to float the filings.

I use stones, and no steel. I never got the hang of using a steel, and the stones work well for the way I use them. I've never had a gadget do a good job on a knife blade. I've tried a few(far from all), and they're either slow to use, or do a half assed job.

It is in storage because I moved recently.
Do you think it grinds away too much from the knife?

Stone for sushi knifes.
Chef's Choice for the rest.
I don't use serrated.

IMO there are plenty of systems that will sharpen your knifes better, but the benefits are just slightly better.
