Apparently what we witnessed there IS essentially the "pure slaughter" approach, which is technically the only allowable (by definition) method of slaughtering animals according to religious practices.
There has been some headway into forcing ethical slaughter practices into the religious communities, but it'll take forever to get this done.
It's mostly an issue of ancient texts meets modern world. Back when these religious laws were drafted, what they came up with was actually the best method and "most ethical" if done by skilled hands. That no longer remains the case, but until they adapt a "it should be interpreted as most ethical" mentality instead of "what has been written is the literal and only way to read it, to hell with interpretation!", nothing will change. This goes for everything with religion, not just best slaughtering practices.
Of course, performing that method of slaughter on a PIG is rather ridiculous. Sure, it's the best "no modern tools, kill through slaughter but not before" approach - but that animal could never be consumed by anyone who requires a religiously-based ritual slaughter.
