As with every other skill in life, there are those who are good at shooting, and those who are not. I happen to be quite good at it. When hunting deer, the ideal area to aim for is the section containing the heart and the lungs, which makes a bigger target than just the heart. If I dont have a shot that I am confident I can make and that will kill the animal quickly, I dont fire. Its as simple as that. A deer hit with a adequate bullet in the heart/lungs will die fairly quickly. A deer shot in the stomach will run far, in many cases far happens to be several miles. Most hunters take the same philosophy as me, since even if you did not care about the how long the deer lives, you dont want to have to track a blood trail through 4 miles of hills, thorn bushes, and creeks, and then have to make the return trip with the carcass.
BTW, I eat my deer. Venison steaks are damn fine eating, and so are venison burgers. Also, members of my family are happy to take some ground venison off my hands if I harvested a particularly large animal and will not be able to eat all of it before it goes bad in the freezer.
