I'm thinking shallots would be better. Can't go wrong with white wine and shallots.

But should I be getting any color on the sprouts? Mouth is watering already.

roast em until the outer leaves are dark brown and crunchy. almost burnt.

Coat in olive oil, crush hazelnuts on top with just a little sea salt. Roast in oven.

I typically do one of two things.

1)
Cook the sprouts in a large pot of boiling salted water until bright green, about 3 minutes. Drain the Brussels sprouts and transfer them to a large bowl of ice water. When cool remove the Brussels sprouts from the cold water, drain well, and cut them in half lengthwise.

Melt the butter in a large sauté pan over medium-high heat until it is golden brown about 2 minutes. Add the sprouts and increase the heat to high. Sauté until the Brussels sprouts are golden brown, about 5 minutes. Season to taste with salt.

2)Something similar to this http://www.chow.com/recipes/13580-braised-brussels-sprouts

wash and cut in half. drizzle in olive oil, salt and pepper so each is somewhat covered.

put in hot skillet cut side down, covered and cook until the cut side is getting browned and they are getting tender. flip them and add cheese of our choice ( my fav. is smoked cheddar) let cheese melt onto sprouts while they finish cooking and serve.

This is what we do, minus the cheese.

I love Brussels Sprouts. I just boil them and put butter and little garlic on them.

Take any recipe including brussel sprouts, remove the brussel sprouts and voila, it's instantly better.

I love brussell sprouts but the prep time takes forever.. I used to make them every 2-3 days but it just took too long. I like the salt and pepper + roasted in oven, which takes almost 1 hr total.

Also my local stores only carry the larger ones ie 1" rounds. I only found the baby ones once, they were like .5 rounds or smaller, those taste much better than the larger ones.

You're not one of those people with the genetic defect that makes you hate cilantro, are you?

I actually am, can't stand cilantro a single bit. Tastes like soap.

Is that why I can't enjoy brussel sprouts?

No. It's completely different.

That's what I figured, but find it strange I love everything from the whole cabbage family, but not brussel sprouts. I'll try them again.

Signed up for a local produce delivery, each week I get a big carton of local stuffs, guess it's brussel sprout time. Kinda fun opening the box - "hmm, what the hell is this and what do I do with it?"

I wonder where that comes from? I personally love cilantro. I'd gnaw on it like a cow with grass, but everyone that hates cilantro says it tastes like soap.

Has to be genetic.

I've also only had sprouts once or twice where I actually liked them. I'm trying out some of these recipes soon...

I heard that overcooking brussels sprouts gives them a band bitter flavor. Have to get them just right

Preheat oven to 425
cut off the base
slice in half
peel off some leaves
rinse
pat dry
toss them in olive oil & course salt
baking sheet into oven at 425 until crispy and golden brown & carmelized
toss a few times while in oven

Use the exact same recipe for broccoli, green beans, and asparagus as well.

I roast them with some bacon and a bit of balsamic vinegar, plus lots of pepper. Delicious!
