I know in order to get the dual channel memory to work you have to use two dimms. What would the side effects be if I were to use three? Does it still work or does it revert to a slower configuration?
Check out the synthetic benchmarks at LostCircuits. I'm not a big fan of synthetic benchmarks but it certainly doesn't look like it slows down the way the old nForce 400-series chipsets did when a third DIMM was added. Just the opposite, it goes faster. If I cave in and buy one with money I don't have I'll make sure to test and report.
