If I'm not mistaken, Sony (or maybe Polyphony Digital) doesn't want to pay EA royalties to use the license, and so refuses to pony up and put them in the game. Ferrari and Porsche are the biggest omissions, but there are so many great cars that they leave out only to put some of the crappy cars from that manufacturer in.
Meh, GT isn't evolving. Its just more of the same, and I have much more fun with the first three games. The 4th was just an amalgamation of them with a fresh new coat of paint. Not only that, but they really need to walk the line of fun versus reality. The first game doesn't feel realistic nor that fun now. The second was much more fun and arcadey but the realism suffered. The third retained the fun but added more realism. The fourth went too far into realism and lost some of the fun. I feel they're messing up with the off course stuff as well. For instance, it seems like they can't make up their mind if they want to make oil changes and things like that more common or just an afterthough. Either integrate it, or drop it, or better yet, make it an option.
The biggest change that needs to be made to GT though is in the AI department. Well that and they need more consistency in cars. I hate when they only put one car from some manufacturers that have a couple that are very cool, and then have 50 versions of other cars like the NSX (which isn't a bad car, but nearly all of them drive the same, so just have a few and make it so you can change the paint scheme and things).
