fighting with an absolutely garbage oven in the last 1 1/2 years, i have taken the habit of cubing my fresh mozzarella and salting it with coarse salt. This helps a lot in removing moisture, you then squeeze out the liquid and most of the salt goes out with that. It really improves the way it melts and it doesn't make my pizza soggy.
It's not necessary if you own an oven that doesn't suck donkey balls, but in case you do, there's my protip.

oh and i recommend a metal pizza peel from amazon, they are much thinner and work much better as a classic peel - easy to slide it under the pizza even when thin.

I use a Superpeel to load (100% perfect every time!) & a smaller metal peel to turn & unload:

damn you internet and damn you ATOT. You made me spend six hundred bucks on charcuterie in the last 3 days.

I bought a 2.7kg spenish jamon from amazon because i was drunk.
Then i noticed that the ham is a slow delivery, and it will be here by the end of the month, so i bought another 2.5kg iberico that arrives today.

And then i just couldn't resist the cravings so i bought .. about 13 kilos of ham & salami from the croatian supplier.

You guys suck at talking about pizza
It's something of a guilty pleasure. I went for a few years (until about 2 years ago) without eating pizza unless it was served to me somewhere. But I started making it again, weekly, and adjusted my lifestyle so on balance I'm eating OK.

I mean, let's be honest. Not a great source of fiber. Tends to be high in sodium, I'd think, fatty because of the cheese and typical meats.

Once a week, I'll indulge it.

I was allergic to gluten & dairy for 10 years

I refuse to let a week go by without having at least a slice now lol

My understanding is, and I'll have to check with my accountant, but my understanding is that when pizza is on a bagel, you can have pizza any time.

Any... time...

It's almost too much power.

(1) You're hungry

I remember reading somewhere that

(1) fat cells never disappear
(2) fat cells affect hunger by releasing hormones

So people who become obese, even after getting back to a normal weight, generally feel hunger more intensely than people who have been fairly lean their entire lives. Makes it harder to keep the weight off.

If your conjecture that food tastes better when hungry, it also makes food harder to resist, compounding the problem.
