This is my favorite: (has a tad bit of heat & a LOT of flavor)

* 2 or 3 ripe Hass avocados
* 1 juiced lime (2 Tbps or so of RealLime or similar juice-in-a-bottle works in a pinch)
* 1 shallot (or part of a small onion, shallot is better tho)
* 1 jalapeño pepper (remove seeds & chop)
* A tablespoon (or two) of chopped fresh cilantro
* A couple dashes of chili powder
* A sprinkle or two of Tabasco sauce
* 1 small tomato (optional)
* Kosher salt to taste

Chop everything up, mash it all together with the avocado using a fork, taste as you go to get the right flavor, and leave it chunky enough for your tastes. To date, this is the absolute best guac I have ever tried.

I do pretty much the same except without the tomato and cilantro. If I have tomato, I'll make pico de gallo instead.

Cilantro tastes like soap, but I've found Italian parsley is a good substitute in any dish that calls for it.

I've whittled down my recipe quite a bit. Now since buying avocados from Costco and primarily using guacamole for taquitos or flautas, I only use avocado, lime/lemon juice and salt because I can make a huge amount and it freezes very well in ziplocs.

If making fresh as a side for a huge meal I will make it using: avocado, white onion, tomato, lime, salt and pepper to taste. I only add jalapeno if everyone likes it spicy like me. Your recipe looks good!

I just do the three.

Lime, salt, avocado.

It's plain, but tasty. I could try adding onions... :hmm:

Use only mild onions because I find stronger varieties can be overpowering. Easy to add too much.

How do you thaw yours out without it browning? Even with lime juice, mine will turn brown if left out for an hour or so.

When I freeze out I squeeze it flat in the Ziploc to push out as much air as possible. It defrosts fast so I will leave it outside for ~1 hour or run the bag under warm water right before use. Once thawed and in the fridge, it will brown like normal without preservatives.

Usually I freeze in portions that will be consumed with no need for further storage.

I don't have the recipe offhand ...

avocado, onion, tomato, cilantro, garlic, jalepeno, salt, cumin, cayenne, lime...

2 minced fresh cloves garlic
1/2 white onion, diced.
1 roma tomato, diced small (and trained of juice)
3 serrano chiles
some cilantro.

salt and pepper to taste.
throw on some grated cotija cheese if i want to be fancy.


no sense in lime if i'm eating immediately...

Part of the function of lime is as an acid is to prevent browning, but most have come to expect lime flavor and it is also a customary and integral part of Mexican cuisine.
