Just change the port. 25 is the SMTP port, so you only use that port when you are SENDING mail. Change the port on the server, then change the port your mail client sends to. I know both Outlook and Mozilla let you set both the SMTP port and the POP3 port.
If your ISP blocks the POP3 port, you can change that as well. If you set the POP3 port to be 5000, your email address would be you@yourdomain.com:5000.

I only have one going right now - running RedHat 7.3ish and SAMBA for hosting files. It's a slick little K6-3+ 450mhz with 256mb RAM. It runs very well, is dead silent, and never goes down. I love the old K6-2/K6-3 procs.
