None .you will need a motherboard that that does duel channel ram, since ram is the bottleneck on all computers.

Futureshop is selling 80GB WD 800DJ for $80.00CAN. I was thinking about buying 2 or more and running Raid 0. What type of performance increasing am I going to see when playing games and loading applications like explorer, excel, random complier.

Hey wait a minute. Some games have extremely long load times. Like the Flight Sim IL2 Sturmovick, for example, can take like 1 full minute to load from my ATA133 7200RPM Maxtor. Wouldn't a SATA raid 0 be a big impovement loading games with huge playing fields into memory? Or what about when you load a quick save after being killed in a shooter? Wouldn't that be a whole lot quicker?

BS! HDD performance compared to RAM is lightyears apart. HDD's are, and will be the bottleneck of all computers for a long time!
That said, RAID 0 will not give you much performance boost. Loading large files and apps will be quicker, but in normal use you will not see the difference.
