Nothing really stands out nowadays like Bebop, Chanploo, and Eva did?
Although not strictly anime in its normal sense, how about Avatar - The Last Airbender?
This...I am past the point of DBZ and the likes...and even though it can come off as being a bit "childish" at times, Avatar is BY FAR one of the best anime out there in terms of story, development, and characters.
You'd be a fool to raise your nose to it...I thought it dumb at first sight until I watched it...it was glorious...can not wait for the movie to fall upon us.
Also want to add: Kimi ga Nozomu Eien
That's probably the most anime show I've ever watched. It's pretty depressing so be warned.
Some titles that I very much liked:
Scifi/Fantasy with romantic undertones
1. Fate/stay night(based on game)-No, terrible. Tried to do too much at once and failed terribly
2.Tsukihime(based on game) - So bad that most people don't acknowledge it exists
Scifi/fantasy
1. Noein(thanks for correction to joesmoke) - Good
2. Raxhephon(mecha, similar to Evangelion) - Creator tried to do his own version of Eva that was less emo. Mostly succeded
3. Black Lagoon(focuses on smuggling culture in Southeast Asia, Thailand I think, very good) - Good for violence and awesome characters
4. Ergo Proxy(dystopian future, philosophical babble warning)-Decent
5. Code Geass(2 seasons, underground resistance movement against a superpower imperialist nation, complex plot)-No
6. Utarawaremono or similar spelled title.- Decent
7. Seirei no Moribito- Don't Know
8. Baccano(1930's setting, deals with gangsters, immortality)-Best one on this list.

I remember that Ergo Proxy. I couldn't stand it.
The goth makeup wearing pig-tailed protagonist with contrived complicated psycho babble... no thanks. I stopped after second or third episode.
Man, I wish I could un-see Samurai Chanploo.. that was so much fun.
I just saw the pilot of Rainbow. Meh. So the synopsis is just getting ass raped in the juvie? Some parts gave me goosebumps because it was too cheesy and dramatic (I beat you all up, then I protect u, then we're friends!)
Checking out Code Geass now...
