Princejoe, Soul Calibur is a Must Have if you're into fighting games. I'm not a violent person in real life, but that game is like virtual crack! You Cannot. Stop. Playing. It. The graphics are stunning and the gameplay is amazing. Best $20 you'll ever spend, trust me. As for the other games you listed, I haven't played them enough to comment-- except for Sonic-- and that's a lot of fun. I haven't met anybody who didn't like that one.
If I were you, I'd get the Sports Pack-- that's a decent deal and even if you don't end up liking the games, you could always sell or trade them. Plus, the black console looks cool as sh*t; while the grey one is so plain and ugly, you'll want to hide it under your bed when your friends come over. I got in on the deal with the Smash Pack a couple of weeks ago cause I needed a spare DC for my bedroom, but I can't really recommend the Smash Pack. It's alright, but not worth the extra money. The graphics are so old and cheesy, I can't even stand to play the games (and this is coming from a person who likes old, cheesy games! Whoever mentioned Donkey Kong and Pac Man was singing my song-- I'd much rather have had those games instead).
Sega Swirl is okay, but don't waste your money on it cause it's included on the web browser cd that comes with your DC anyway. To me, it's not as fun as (original) Tertris or even Amazing Blocks (pc game).
Other Must Haves besides Soul Calibur were already mentioned: Virtua Tennis, Crazy Taxi, Jet Grind Radio, PSO, Tony Hawks 2, NBA2K1, and Shenmue. I'd also pick up Samba di Amigo if I could find a good deal on the maracas.
