You can get frozen meatballs just about anywhere. I know costco has some pretty good ones, beef, italian, I've even tried some kind of chicken and cranberry (i think) meatball.

If the store sells rotisserie chickens they might have a rotisserie chicken salad they make from any unsold birds. Big Y near me does this and it is pretty damn good on a sub roll.

Chopped Italian is fun to make if you have the time or a Slap-Chop type device to make it faster.

Get a panini press and make some Cubanos.

Pastrami or corned beef with melted swiss.

Ooohh you could try making a lobster roll. Not sure if that's sub territory but it's a sandwich at least. I've only ever had once in Disneyland so I'm not sure that counts but it was good!

Not something I make around the house, but fried fish subs are good. Some kind of batter fried whitefish(cod's a great choice), raw onion, lettuce, and tomato. You can use tartar sauce if you're a weenie, but Tabasco and black pepper's better. Maybe a sprinkle of OldBay.

There's a sub sandwich called a Roman Burger from a local chain in Ohio called Mr Hero. It's essentially cheeseburger patties + onion + lettuce + tomatoes + grilled salami with sub dressing. Usually eaten with waffle fries and cheese sauce. They're really good and it's pretty easy to make a copycat recipe at home. They're best with Sub Dressing (Beano's or similar) but normal Italian dressing would be fine. This is a couple I've made previously(one normal one, one 'party sub' one for multiple people) -

That looks more like ham than salami. I have had a burger with ham on it before, of course, not sure if I've done salami.

In the "party sub" photo that I made it was salami with ham on top. The other one I made was just salami I believe. The Mr Hero website lists "grilled salami and Italian luncheon meat". I'm sure it would be good with any kind of cured deli meat, I've made it before with sandwich pepperoni also.
