You're asking some unsettling question for a person getting ready to assemble a PC himself. :roll:
I would suggest you buy a pre-built system rather than build your own...
Unless you have someone who is experienced and can work closely with you every step of the way.

improper installation of components may damage your system build, resulting in a void of your parts which pretty much ruins a good budget.

Not that I have been here much longer then Le Petomane, but come on you can't be serious about your comment on the DFI Ultra-D. I am very sorry for you if you think the board really sucks that bad.

Hey, I live in Australia. DFI boards are hard to get, and damn expensive down here.

For prices, goto www.staticice.com.au .

MB: The A8N-SLI deluxe is great, but it is alot of hassle getting a replacement fan set to australia. Go for the premium if your budget will allow.
CPU: The 3500+ is more cost effective. 3200+ is still enough for most applications.
RAM: Nice choice on the 2x1GB corsair.
OPTICAL: Go the Pioneer!

Go with the Epox board if you can get it. Should be much cheaper than the ASUS without the problems. I don't like SLI, but the Epox does have it if you still feel the need.
Since you don't plan to OC, maybe drop to a 3500+ or 3700+ and then get a 6800 GT with the money saved on the MB and CPU.
Corsair VS RAM is fine and will work great.

IMO going with the DFI board and not OC'ing is a waste. However, if you do decide to go with the DFI board, get some OCZ RAM and save some headaches. The DFI board is picky about RAM, but it really seems to like OCZ.

Maybe POS is a little harsh, but it does seem to have alot of stabilty and compatability issues. Maybe they have been worked out, I don't know. I really don't think it is a board to be suggesting for those new to building a computer. If you do recommend it, maybe you should point them to DFI street, where they can get an idea of what they are getting into. The Epox is probably the most ideal motherboard for your average user looking for an nforce4 ultra. Not only is it about $30 cheaper, it works well with value ram, and it doesn't have the somewhat high PSU requirement. With the money you save on it, you could invest in a better video card and get much more for your money.
