Some vegetarian things I like making:
Stir fry - just chop up a bunch of vegetables and toss them in a wok with some oil and soy sauce, serve with noodles or rice, super easy
Asparagus leek soup - This is a good one that my wife found a couple weeks ago. Basically you cook some asparagus and leeks and then blend them with chicken broth and a splash of heavy cream. Though in your case I guess you'd have to use vegetable broth instead.
Tacos - Vegetarian refried beans, cheese, lettuce, tomatoes, onions, guacamole, sour cream, any other vegetarian ingredients you can get that would go well with tacos.
We had some stuffed eggplant recently that was good as well. Cut an eggplant in half, hollowed it out, cubed the insides and cooked them with a bunch of other vegetables (mushrooms, tomatoes, etc.) and pearl barley. Eggplant is pretty good if you do it right. It needs a fair amount of oil.
Potatoes and beans - Just use them, a lot. They're hearty and filling. If you only eat vegetables you'll be hungry all the time. Make mashed or scalloped potatoes as a side dish or throw in some potato chunks or a can of beans with whatever veggies you're cooking.
I rarely eat meat at home even though neither I nor my wife are vegetarian. We just don't usually bother making meat, it is relatively expensive and requires extra prep time. Funny thing, she was "sort of vegetarian" (only occasionally ate meat) when I met her, now she'll eat it just as readily as I will.
